Once & Future Winemakers Dinner
On Wednesday, October 28, Wine Bar George welcomes Joel Peterson, founder and winemaker of Once & Future (& Ravenswood). As the California producer known for old-vine Zinfandel, Joel will share his depth of knowledge and experience in making his famous Zinfandel wines while you enjoy a five-course dinner specifically created to pair with these fantastic wines.
Executive Chef Will Davison's menu is inspired by a nose-to-tail approach using a whole pig, presented below. Each course is paired with a Once & Future wine, poured and introduced by Joel himself. He'll speak about the old vines, the vineyards, the philosophy behind each bottle, and why Zinfandel is considered America's one unique grape!
